vegetable pulao

Potato 3
Carrot 2
Green peas 1/2 cup
beans 100 gms
Cauliflower small size 1
Tomato 2 small size
Red chilly pd 2 Tsp
Turmeric pd 1/2 Tsp
Fennel seeds 2 Tsp
Cinnamon 2 medium sized
Cloves 4
Pepper corns 10
Cardamom 2
Black cardamom 1
Ginger paste 1 Tbsp
Garlic paste 2 Tbsp
Chopped coriander and mint leaves 2Tbsp
Basmati rice 1 cup (washed and soaked for 1/2 hour )
salt As per taste
In a mixer make a coarse powder of cinnamon,cloves, fennel, black pepper, cardamom and black cardamom and tie the powder in a muslin cloth and keep aside. Take a pressure pan and add 4 to 5 Tbsp of oil and when it becomes slightly hot add the garlic and ginger paste to it and saute it for a minute in low flame, then add the vegetables one by one except for tomatoes and saute the vegetables till they are slightly cooked . Now add tomatoes and saute for a minute and then add chilly powder, turmeric powder, salt and keep it in medium flame sauteing often for about ten minutes. Now add the soaked basmati rice to the vegetables in the pressure pan and add 2 cups of water and add salt and the powdered masalas tied in muslin cloth to it and close the pan . When steam starts coming put the weight to the pan and reduce the flame to medium and after two whistles turn off the flame and let the pressure to release itself. Now open the pan and remove the muslin cloth and add chopped mint and coriander leaves and squeeze juice of half lemon and serve hot with onion raita.
